Lemon Chicken Soup With Quinoa
Ingredients
- 1 tablespoon Olive Oil
- 2 cup Carrots
- 2 cup Celery
- 0.5 cup Onions
- 0.5 cup Dry
- 1 pound Chicken
- 0.5 cup Quinoa
- 6 tablespoon Lemon Juice
- 0.5 teaspoon Black Pepper
- 4 cup Spinach
Instructions
- In a large pot over medium heat, cook the carrots, celery and onion in the olive oil for about 7 minutes.
- Add chicken broth, chicken, quinoa, lemon juice and pepper.
- Bring to a boil, then reduce heat and simmer until quinoa is tender, 20 minutes.
- Add spinach and cook until tender.
