1 tablespoon Olive Oil 2 cup Carrots 2 cup Celery 0.5 cup Onions 0.5 cup Dry 1 pound Chicken 0.5 cup Quinoa 6 tablespoon Lemon Juice 0.5 teaspoon Black Pepper 4 cup Spinach
In a large pot over medium heat, cook the carrots, celery and onion in the olive oil for about 7 minutes.
Add chicken broth, chicken, quinoa, lemon juice and pepper.
Bring to a boil, then reduce heat and simmer until quinoa is tender, 20 minutes.
Add spinach and cook until tender.
