Ingredients
  

  • 1 tablespoon Olive Oil
  • 2 cup Carrots
  • 2 cup Celery
  • 0.5 cup Onions
  • 0.5 cup Dry
  • 1 pound Chicken
  • 0.5 cup Quinoa
  • 6 tablespoon Lemon Juice
  • 0.5 teaspoon Black Pepper
  • 4 cup Spinach

Instructions
 

  • In a large pot over medium heat, cook the carrots, celery and onion in the olive oil for about 7 minutes.
  • Add chicken broth, chicken, quinoa, lemon juice and pepper.
  • Bring to a boil, then reduce heat and simmer until quinoa is tender, 20 minutes.
  • Add spinach and cook until tender.
