Fried Chicken Chicken Salad is one of my favorite ways to use up leftover fried chicken, and honey, it comes together faster than you can say “supper time!” This creamy, satisfying salad is perfect for lunch or a light dinner when you want something special without spending all day in the kitchen.
What makes this salad truly wonderful is how the crispy, flavorful fried chicken pairs beautifully with the cool, crunchy celery and onions, all brought together with a touch of creamy mayonnaise and my secret weapon—Jane’s Krazy salt, which adds just the right amount of seasoning without any fussing.
I love serving this on a bed of fresh greens or tucked into a soft roll for a sandwich that’ll make your family smile, and it’s one of those dishes that brings back memories of summer picnics and church potlucks where everyone always asked for the recipe.
