Sweet Potato Salad

Sweet Potato Salad is one of my go-to dishes when I want something that feels special but doesn’t fuss me too much in the kitchen. The natural sweetness of the potatoes paired with those tart raisins just makes everyone smile when they take their first bite.

What makes this salad truly shine is the combination of fresh red onions and a touch of ginger—they give it such a lovely zing that keeps it from being too heavy. The creamy mayonnaise base brings everything together beautifully, and I always make sure my potatoes are fork-tender before tossing them together so they soak up all those wonderful flavors.

I love bringing this to family gatherings because it’s always one of the first dishes to disappear from the table. My grandchildren ask for it year after year, and there’s something so heartwarming about seeing them go back for seconds and thirds.

Ingredients
  

  • 2 cup Sweet Potato
  • 0.5 cup Raisins
  • 0.66666666666667 cup Fresh Red Onions
  • 0.33333333333333 cup Celery
  • 2 teaspoon Ginger
  • 0.5 cup Mayonnaise
  • 1 tablespoon Parsley

Instructions
 

  • Cook potatoes until they are fork tender in boiling water.
  • Drain the potatoes and cool them completely.
  • Soak the raisins in hot water for 15 minutes and then drain.
  • Combine all the ingredients and mix them thoroughly, but gently.
  • Chill for 24 hours before serving.
