Ingredients
  

  • 2 cup Sweet Potato
  • 0.5 cup Raisins
  • 0.66666666666667 cup Fresh Red Onions
  • 0.33333333333333 cup Celery
  • 2 teaspoon Ginger
  • 0.5 cup Mayonnaise
  • 1 tablespoon Parsley

Instructions
 

  • Cook potatoes until they are fork tender in boiling water.
  • Drain the potatoes and cool them completely.
  • Soak the raisins in hot water for 15 minutes and then drain.
  • Combine all the ingredients and mix them thoroughly, but gently.
  • Chill for 24 hours before serving.
