Ingredients
  

  • 1 cup Peaches
  • 0.5 cup Orange Juice
  • 2 tablespoon Brown Sugar
  • 0.25 teaspoon Cinnamon
  • 1 cup Blueberries
  • 0.5 cup Strawberries
  • 1.25 cup All-Purpose Flour
  • 0.5 cup All-Purpose Flour
  • 2 tablespoon Seeds
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Cinnamon
  • 1 cup Buttermilk
  • 0.75 cup Orange Juice
  • 1 tablespoon Canola Oil
  • 1 teaspoon Vanilla Extract

Instructions
 

  • Compote: In a small saucepan, combine peaches, orange juice, brown sugar and cinnamon.
  • Bring to a boil.
  • Add berries.
  • Cook and stir for 8 minutes or until thickened.
  • Set aside.
  • Waffles: In a large bowl, combine flours, flaxseed, baking powder, baking soda and cinnamon.
  • Combine the buttermilk, orange juice, oil and vanilla; Stir into dry ingredients just until moistened.
  • Cook in a preheated waffle iron until golden.
  • Serve with compote and enjoy!
