- 1 cup Peaches
- 0.5 cup Orange Juice
- 2 tablespoon Brown Sugar
- 0.25 teaspoon Cinnamon
- 1 cup Blueberries
- 0.5 cup Strawberries
- 1.25 cup All-Purpose Flour
- 0.5 cup All-Purpose Flour
- 2 tablespoon Seeds
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 0.5 teaspoon Cinnamon
- 1 cup Buttermilk
- 0.75 cup Orange Juice
- 1 tablespoon Canola Oil
- 1 teaspoon Vanilla Extract
Compote: In a small saucepan, combine peaches, orange juice, brown sugar and cinnamon.
Bring to a boil.
Add berries.
Cook and stir for 8 minutes or until thickened.
Set aside.
Waffles: In a large bowl, combine flours, flaxseed, baking powder, baking soda and cinnamon.
Combine the buttermilk, orange juice, oil and vanilla; Stir into dry ingredients just until moistened.
Cook in a preheated waffle iron until golden.
Serve with compote and enjoy!
