Vegan Tofu Pound Cake is such a lovely treat to bake when you want something tender and moist without any eggs or dairy! This cake has become one of my favorite recipes to share with friends and family who follow a plant-based diet.
What makes this recipe so special is how the silky tofu creates the most wonderful crumb structure, giving you that classic pound cake texture we all love. The combination of tofu and water keeps everything beautifully moist while the vanilla extract and baking powder work together to give you that perfect rise and flavor.
I love serving this cake with fresh berries and a cup of tea on a quiet afternoon, or bringing it to potlucks where everyone’s surprised to learn there’s not a speck of butter or eggs in it. It’s become the cake I reach for when I want to make sure all my loved ones can enjoy a slice together, no matter their dietary choices.
