Healthy Carrot Cake Muffins
Ingredients
- 0.75 teaspoon Baking Powder
- 0.25 cup Applesauce
- 0.25 cup Sugar
- 0.33333333333333 cup Brown Sugar
- 0.75 cup All-Purpose Flour
- 0.75 cup All-Purpose Flour
- 1 teaspoon Baking Soda
- 0.75 teaspoon Cinnamon
- 0.25 teaspoon Nutmeg
- 0.25 teaspoon Salt
- 1 tablespoon Honey
- 1 cup Carrots
- 0.5 cup Soymilk
- 0.5 cup Walnuts
- 0.5 cup Raisins
Instructions

- In a small bowl mix baking powder and applesauce into a foamy mixture, set aside.

- In a large bowl mix flour, sugar, baking soda, cinnamon, nutmeg, and salt.

- Add honey, carrots, milk, and applesauce mixture.

- Mix well.

- Add nuts and raisins.

- Spray muffin pan with nonstick cooking spray or line with cupcake liners.
- 7.
- Fill muffin pan 3/4 full.

- Bake at 350 degrees for 30 minutes or until toothpick comes out clean.
