Spiced Zucchini Bread Oatmeal
Ingredients
- 2 cup Apple Juice
- 1 teaspoon Cinnamon
- 0.5 teaspoon Ginger
- 0.5 teaspoon Nutmeg
- 0.25 teaspoon Cloves
- 0.25 teaspoon Salt
- 0.25 teaspoon Apple Cider Vinegar
- 0.5 cup Oats
- 1 cup Squash
- 1 cup Figs
Instructions
- Bring apple juice, cinnamon, ginger, nutmeg, cloves, salt (if using), and apple cider vinegar to a boil in medium saucepan.
- Stir in oats, reduce heat to medium, and cook 2 minutes.
- Stir in grated zucchini and raisins.
- Reduce heat to low, and simmer oatmeal 30 minutes, stirring occasionally.
