Easy Roasted Cheddar-Bacon Potato Salad
Ingredients
- 3 pound Potatoes
- 2 tablespoon Olive Oil
- 1 tablespoon Salt
- 1 teaspoon Black Pepper
- 1 cup Mayonnaise
- 1 cup Cheddar Cheese
- 1 cup Bacon
Instructions

- Preheat oven to 425F.

- Scrub potatoes and dice into bite-size pieces.
- Put in a bowl and toss with olive oil, salt & pepper.
- Spread in a single layer on a baking sheet.
- Bake for 40-45 minutes, tossing halfway through cooking, until browned.

- While potatoes are still hot, transfer to a bowl and combine with mayo, cheddar cheese, and bacon bits.
- Taste and season as needed with salt and pepper.
- ** Best if served warm, but also good cold or reheated.
- Note: Depending on the potatoes you use, you might need to add more mayonnaise as some tend to soak it up more than others.
