Ingredients
  

  • 3 pound Potatoes
  • 2 tablespoon Olive Oil
  • 1 tablespoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Mayonnaise
  • 1 cup Cheddar Cheese
  • 1 cup Bacon

Instructions

  • Preheat oven to 425F.

  • Scrub potatoes and dice into bite-size pieces.
  • Put in a bowl and toss with olive oil, salt & pepper.
  • Spread in a single layer on a baking sheet.
  • Bake for 40-45 minutes, tossing halfway through cooking, until browned.

  • While potatoes are still hot, transfer to a bowl and combine with mayo, cheddar cheese, and bacon bits.
  • Taste and season as needed with salt and pepper.
  • ** Best if served warm, but also good cold or reheated.
  • Note: Depending on the potatoes you use, you might need to add more mayonnaise as some tend to soak it up more than others.
