Creamy Chicken Casserole is one of my most beloved comfort dishes, and I just know your family will ask for seconds! It’s the kind of meal that brings everyone to the table with smiles on their faces.
What makes this casserole truly special is the combination of creamy cottage cheese and sour cream that creates the most luscious, tender filling for the chicken and rice. The butter and onions sautéed together at the start build such a wonderful foundation of flavor that makes the whole dish sing.

Creamy Chicken Casserole
Ingredients
- 0.66666666666667 cup Rice
- 0.25 cup Onions
- 2 teaspoon Butter
- 0.5 cup Cottage
- 0.33333333333333 cup Onions
- 3 tablespoon Sour Cream
- 0.25 teaspoon Salt
- 1 dash Black Pepper
- 0.5 cup Chicken
- 0.5 cup Cheddar Cheese
Instructions
- Cook rice according to package directions.
- In a small skillet, saute onion in butter until tender; set aside.
- In a small bowl, combine cottage cheese, onion dip, sour cream, salt and pepper.
- Stir in rice & onion.
- Spread half of the rice mixture into a 3 cup baking dish coated cooking spray.
- Layer with chicken, 1/4 c cheddar cheese.
- Top with remaining rice mixture.
- Sprinkle with remaining cheese.
- Bake uncovered at 360 for 25-30 minutes or until bubbly.
