Sorta Chicken Pot Pie is one of my go-to weeknight dinners when I want something hearty and satisfying without spending hours in the kitchen. It’s the kind of dish that fills your home with the most wonderful aroma while you’re waiting for it to come out of the oven.
What makes this recipe so special is how the fresh red onions and garlic powder create a lovely flavor base, while the potatoes, celery, and peas give you all the comfort you need in one dish. It’s such a simple technique—just combine everything in your casserole and let the oven do the work for you.
I love serving this to my family on chilly evenings, and it’s always the first thing gone from the table. There’s something so comforting about gathering everyone around for a warm, homemade meal that tastes like it took all day to prepare.
