Ingredients
  

  • 0.66666666666667 cup Rice
  • 0.25 cup Onions
  • 2 teaspoon Butter
  • 0.5 cup Cottage
  • 0.33333333333333 cup Onions
  • 3 tablespoon Sour Cream
  • 0.25 teaspoon Salt
  • 1 dash Black Pepper
  • 0.5 cup Chicken
  • 0.5 cup Cheddar Cheese

Instructions
 

  • Cook rice according to package directions.
  • In a small skillet, saute onion in butter until tender; set aside.
  • In a small bowl, combine cottage cheese, onion dip, sour cream, salt and pepper.
  • Stir in rice & onion.
  • Spread half of the rice mixture into a 3 cup baking dish coated cooking spray.
  • Layer with chicken, 1/4 c cheddar cheese.
  • Top with remaining rice mixture.
  • Sprinkle with remaining cheese.
  • Bake uncovered at 360 for 25-30 minutes or until bubbly.
