Banana Bread (Vegan) is one of my favorite recipes to whip up when I’ve got ripe bananas sitting on the counter. It’s so moist and delicious, and nobody would ever guess there’s tofu hiding in there!
What makes this bread so special is the creamy tofu that keeps it tender without any eggs or dairy – just pure comfort in every slice. The combination of ripe bananas, a touch of vanilla, and good olive oil creates such a wonderful flavor that’ll have everyone asking for seconds.
I love sharing a loaf of this with my neighbors or bringing it to potlucks, and it always brings smiles to faces. It’s become a tradition in our family to bake this together when the grandkids visit – there’s something magical about creating something so wholesome from scratch.

Banana Bread (Vegan)
Ingredients
- 0.75 cup Tofu
- 1 cup Sugar
- 0.25 cup Olive Oil
- 1 teaspoon Vanilla Extract
- 1 cup Bananas
- 2 cup All-Purpose Flour
- 0.5 teaspoon Baking Soda
- 0.5 teaspoon Baking Powder
- 0.5 teaspoon Salt
Instructions
- Preaheat oven to 350F.
- Put tofu in a food processor and blend until creamy.
- Pour into a large bowl.
- Mix in the bananas, sugar, vanilla, and oil.

- Mix together the baking soda, flour, baking powder, and salt.
- Combine the 2 bowls and mix them together.
- Pour into an oiled (or greased) bread pan.
- Bake for 50-60 minutes.
