Slow Cooker Potatoes Au Gratin by Kim is one of those dishes that just warms the heart right up, dearie. I love how this recipe lets the slow cooker do most of the work while you tend to other things around the kitchen.
What makes this recipe so special is the creamy, buttery goodness that comes from the simple combination of tender potatoes and a rich roux made with butter and flour. The key is getting those potatoes just partially cooked first, so they finish perfectly in the slow cooker and become absolutely divine.
This is the kind of comfort food I love serving at family gatherings—it’s hearty, it’s elegant, and it always brings everyone back for seconds. There’s something so lovely about watching your loved ones enjoy a big spoonful of these creamy potatoes, knowing you made something that brings them such joy.
