Quinoa Risotto with Broccoli and Saffron

Quinoa Risotto with Broccoli and Saffron is one of my favorite dishes to make when I want something special but not too fussy. The golden saffron gives it such a lovely color and a delicate flavor that makes everyone at the table smile.

What makes this recipe so lovely is how the quinoa absorbs all those wonderful flavors while staying nice and tender, and that saffron truly is the star of the show. The creamy cheddar cheese and fresh broccoli come together in just the right way, and everything comes from scratch so you know exactly what’s going into your family’s bowls.

I love serving this when the grandchildren visit because it’s colorful, it makes them feel like they’re eating something fancy, and it’s so satisfying on a cool evening. There’s something about sharing a warm bowl of this risotto that brings everyone closer together around the table.

Ingredients
  

  • 2 cup Broccoli
  • 1 cup Quinoa
  • 2 cup Vegetable Shortening
  • 1 pinch Saffron
  • 1 cup Cheddar Cheese
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 1 tablespoon Parmesan Cheese

Instructions
 

  • 1.
  • Add your broccoli, quinoa and stock in a pot on a low heat and boil until the quinoa has absorbed all the stock (usually about 15-20 minutes).

  • Once cooked, add your saffron, cheese and seasoning, stirring until combined.
  • 3.
  • Garnish with parmesan and more pepper.
