Pumpkin Pie Bites are one of my favorite treats to whip up when the autumn leaves start falling, dearie. They’re so simple to make, and they bring all that cozy pumpkin pie flavor right to your fingertips without any fussy baking required.
What makes these little bites so special is how the pumpkin, honey, and peanut butter come together in the most delightful way, all held together with wholesome oats and seeds. The cinnamon is what really makes your kitchen smell like home, sweetheart—it’s that little touch that reminds everyone of the holidays.
I love serving these at family gatherings because they disappear faster than you can say “seconds,” and folks are always so surprised when I tell them how easy they are to make. These little bites have become a tradition at our autumn get-togethers, and now all my grandchildren ask me to bring them whenever we gather ’round the table.
