Marvin Davis’s Salad To Accompany Risotto is one of my favorite dishes to serve alongside a creamy bowl of risotto. This beautiful salad brings such a lovely freshness to the table, with its bright colors and wonderful flavors that just dance together.
What makes this salad truly special is the lovely combination of crispy lettuce, juicy tomatoes, and those delightful capers that add a little tang. The toasted pine nuts give it such a nice crunch, and when you toss it all together with a good balsamic vinegar, you’ve got yourself something really quite lovely.
I love serving this alongside my risotto dishes at family dinners — it’s the perfect complement that keeps everything from feeling too heavy. My grandchildren always ask for seconds, and I think it’s because the fresh corn and bright flavors remind them that a good meal needs balance and joy.
