Honey Vanilla Almond Granola is one of my favorite recipes to make on a quiet Sunday morning, dear. There’s something so special about the way the honey and vanilla fill your kitchen with the most wonderful aroma as it toasts away in the oven.
What makes this granola truly special is the combination of pure honey and real vanilla extract mixed right in with those crunchy almonds and wholesome oats. The shortening confectionery helps everything get beautifully golden and binds all those lovely ingredients together just right.
I love to fill a mason jar with this granola and give it to my grandchildren when they visit—it’s the kind of homemade gift that says “I was thinking of you.” Serve it over yogurt or with cold milk, and watch their faces light up knowing Gran made it from scratch.

Honey Vanilla Almond Granola
Ingredients
- 0.5 cup Shortening Confectionery
- 0.5 cup Honey
- 2 tablespoon Vanilla Extract
- 2.5 cup Oats
- 1 cup Almonds
Instructions
- Preheat oven to 350 degrees F.
- In a microwave proof bowl, combine the oil and honey.
- Heat for 45 seconds at a time until the oil is melted.
- Add vanilla and stir well to be sure it is combined.
- Pour in oats and almonds stir until everything looks moist and covered in the honey mixture.
- Spray a large cookie sheet with cooking spray, dump the oat mixture on the pan and make sure it is spread evenly.
- Bake 10 minutes.
- Remove from oven and stir everything well.
- Bake 10 more minutes.
- Remove and let cool completely before storing.
- Note: Regular almonds work great, but Blue Diamond Honey Vanilla Almonds are fantastic in this.
