Caramelized Onion Mashed Potatoes

Caramelized Onion Mashed Potatoes are one of my absolute favorite ways to dress up an ordinary side dish—they’re fancy enough for company but so easy you’ll make them all the time. The sweet, golden onions stirred right into creamy potatoes create something truly special that’ll have everyone asking for the recipe.

What makes these potatoes so wonderful is taking the time to slowly caramelize those onions until they’re sweet and deeply golden—that’s where all the magic happens, dear. When you fold them into buttery mashed potatoes with a splash of buttermilk, you get a dish that’s rich, creamy, and bursting with flavor that no ordinary potato side can match.

Ingredients
  

  • 2 teaspoon Olive Oil
  • 1.5 cup Onions
  • 1.5 pound Potatoes
  • 0.5 cup Buttermilk
  • 2 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add onion; saute 15 minutes or until golden.
  • Place potatoes in a saucepan; cover with water, and bring to a boil.
  • Cover, reduce heat, and simmer 15 minutes or until tender; drain.
  • Stir in buttermilk, butter, salt, and black pepper; mash with a potato masher.
  • Stir in onion.
