Wonderful Leftover Mac and Cheese is one of my favorite ways to turn yesterday’s dinner into today’s comfort food, dearie. Just a quick pop in the microwave and you’ve got creamy, delicious mac and cheese ready to eat again.
The secret to making this work beautifully is using that lovely Parmesan cheese—it adds such a rich, nutty flavor that makes the leftovers taste even better than the first time around. A little butter and milk stirred in while it’s warming keeps everything smooth and creamy, just the way it should be.
I love serving this to my grandchildren for a quick lunch, and they always come back for seconds. There’s something so special about sharing a warm bowl of mac and cheese that reminds everyone of home and love.
