Light and Fluffy Vegan Pancakes are one of my favorite breakfast treats to whip up for the whole family! There’s nothing quite like serving a warm stack of these beauties with a smile, knowing everyone at the table will be happy.
What makes these pancakes so special is how simple they are to make — you just dump all your ingredients together and mix until smooth, and the magic happens right there in the pan! The combination of corn oil and baking powder gives them that wonderful fluffy texture, while a touch of cinnamon adds the most lovely warmth to every bite.
I love making these on lazy Sunday mornings when the grandkids come over, and watching their faces light up when they see a tall stack waiting for them is pure joy. These pancakes have become our little tradition, and I always make extra because somehow there’s never enough to go around!

Light and Fluffy Vegan Pancakes
Ingredients
- 1 cup All-Purpose Flour
- 1 cup Milk
- 2 tablespoon Corn Oil
- 2 tablespoon Baking Powder
- 1 tablespoon Cinnamon
Instructions
- 1 Dump all the ingredients in a large enough bowl and mix till smooth.
- 2 Heat the stove.
- 3 For perfectly equal sized cakes, I use 1/4 measuring cup.
- 4 Once the edges are perfectly browned and cooked about 1/2 inch inward; flip the cake.
- 5 Repeat till the batter is used up or seal into airtight container and save for another day.
- 6 Enjoy!
