Healthy Banana Bread

Healthy Banana Bread is one of my favorite recipes to whip up when I’ve got overripe bananas sitting on the counter. It’s a wonderful way to use up those bananas while making something wholesome that the whole family will love.

What makes this bread so special is the combination of wheat germ and oats mixed right into the batter — they add such a lovely nutty flavor and make it so much more nutritious than regular banana bread. The brown sugar keeps everything moist and tender, and you’ll find yourself making this recipe again and again.

I love to slice this warm from the oven and share it with my neighbors, or pack it in lunch boxes for the grandkids. There’s something about homemade banana bread that brings everyone together — it reminds us that the best treats are made with love and real ingredients.

Ingredients
  

  • 2.25 cup All-Purpose Flour
  • 0.66666666666667 cup Wheat Germ
  • 0.5 cup Oats
  • 0.25 cup Brown Sugar
  • 1 tablespoon Baking Powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Baking Soda
  • 10 tablespoon Regular
  • 1.5 cup Bananas
  • 6 ounce Apple Juice
  • 0.5 cup Egg Substitute
  • 0.33333333333333 cup Walnuts
  • 1 teaspoon Vanilla Extract

Instructions
 

  • About 2 Hours before serving, or early in the day:
  • Preheat oven to 350F (180C).
  • Grease 9×5 inch loaf pan.
  • In large bowl, mix first 7 ingredients.
  • With pastry blender, cut in corn-oil spread until mixture resembles coarse crumbs.
  • Stir in bananas, undiluted apple-juice concentrate, egg substitute, walnuts, and vanilla just until flour is moistened.
  • Spoon batter into pan.
  • Bake 60 minutes or until toothpick inserted into center of bread comes out clean.
  • Cool bread in pan on wire rack 10 minutes; remove from pan and cool slightely.
  • Serve warm, or cool completely to serve later.
