Garden Potato Salad is one of my favorite dishes to bring to summer gatherings, and I think you’ll see why once you taste it! It’s fresh, colorful, and so simple to put together that even the grandchildren can help me make it.
What makes this salad truly special is the combination of crisp vegetables and that tangy Italian dressing that brings everything together beautifully. The sweet cherries and corn add such a lovely touch of brightness, and the fresh red onions give it just the right bit of zing.
I love serving this at potlucks and family reunions because everyone always asks for the recipe, and it’s the first dish to disappear from the table! My grandchildren have such fond memories of helping me chop the red peppers and onions in the kitchen on warm afternoons.

Garden Potato Salad
Ingredients
- 2 pound Potatoes
- 0.25 cup Italian Dressing
- 1 cup Cherries
- 1 cup Corn
- 0.5 cup Red Pepper
- 0.25 cup Fresh Red Onions
- 0.25 cup Basil
- 0.25 cup Sour Cream
- 1 tablespoon Mustard
Instructions
- Cook potatoes in boiling water in saucepan 15 min.
- or just until tender; drain.
- Place warm potatoes in large bowl.
- Add dressing; toss to coat.
- Add remaining ingredients; mix lightly.
- Refrigerate 3 hours or until chilled.
