Ingredients
  

  • 1 cup All-Purpose Flour
  • 1 cup Powdered Sugar
  • 0.5 cup Carbonated
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
  • 0.5 cup Olive Oil
  • 0.5 cup Water
  • 0.5 cup Milk
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Yogurt
  • 2 tablespoon Butter
  • 3 tablespoon Ricotta
  • 2 tablespoon Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla Extract

Instructions
 

  • Preheat the oven at 180 C degrees
  • Grease a baking tin
  • In a bowl sift together all the dry ingredients
  • In a separate bowl whisk together the oil and hot water until well blended a let cool for a couple of mins
  • When cooled add in the milk and vanilla extract
  • Add in the yogurt and mix all very well
  • Gradually pour the wet ingredients to the dry ingredients and whisk together.
  • Pour in the greased tin
  • Bake for about 35-40 mins or until toothpick inserted and comes out clean
  • For the cream:
  • Cream together the ricotta cheese and butter until light and fluffy
  • Add in the light brown sugar, cinnamon and the vanilla and combine
  • When cake is cool… Cut through the middle equally and fill with you favourite jam
  • Sandwich the cake together and spread the cream all over the top
  • From there you can design if however you like…
  • I sprinkled it with chocolate sprinkles
  • Enjoy!
