Cranberry Orange Banana Bread
Ingredients
- 1 cup All-Purpose Flour
- 0.5 cup All-Purpose Flour
- 0.5 cup Sugar
- 2.5 teaspoon Baking Powder
- 0.5 teaspoon Salt
- 0.5 cup Egg Substitute
- 0.5 cup Applesauce
- 1 teaspoon Orange Juice
- 0.5 teaspoon Vanilla Extract
- 1 tablespoon Orange Juice
- 1 cup Bananas
- 1 cup Cranberries
Instructions

- In a large bowl, mix together the flours, sugar, baking powder and salt until well combined.
- Set aside.

- In a separate bowl, mix eggs, applesauce, orange extract, vanilla extract, orange zest and bananas.

- Stir banana mixture into the flour mixture.
- Then add cranberries.

- Stir carefully.

- Pour the batter into a greased loaf pan and bake for approximately one hour at 350 degrees F. Or you can use 3 mini loaf pans and bake for 30 minutes.
- 6.
- Bread is done when a toothpick inserted into the loaf comes out clean.
- Makes 18 slices, approximately 6 slices per mini loaf.
