Ingredients
  

  • 1 cup All-Purpose Flour
  • 0.5 cup All-Purpose Flour
  • 0.5 cup Sugar
  • 2.5 teaspoon Baking Powder
  • 0.5 teaspoon Salt
  • 0.5 cup Egg Substitute
  • 0.5 cup Applesauce
  • 1 teaspoon Orange Juice
  • 0.5 teaspoon Vanilla Extract
  • 1 tablespoon Orange Juice
  • 1 cup Bananas
  • 1 cup Cranberries

Instructions
 

  • 1.
  • In a large bowl, mix together the flours, sugar, baking powder and salt until well combined.
  • Set aside.
  • 2.
  • In a separate bowl, mix eggs, applesauce, orange extract, vanilla extract, orange zest and bananas.
  • 3.
  • Stir banana mixture into the flour mixture.
  • Then add cranberries.
  • 4.
  • Stir carefully.
  • 5.
  • Pour the batter into a greased loaf pan and bake for approximately one hour at 350 degrees F. Or you can use 3 mini loaf pans and bake for 30 minutes.
  • 6.
  • Bread is done when a toothpick inserted into the loaf comes out clean.
  • Makes 18 slices, approximately 6 slices per mini loaf.
