Potato Salad With Lemon-Dill Vinaigrette

Potato Salad With Lemon-Dill Vinaigrette is one of my favorite dishes to bring to summer gatherings, and I think you’ll see why once you taste it. The bright, fresh flavors remind me of sunny afternoons spent with loved ones around the table.

What makes this recipe truly special is the homemade lemon-dill vinaigrette—it’s so much lighter and more flavorful than mayonnaise-heavy versions I used to make. The fresh red onions, capers, and celery give it a wonderful crunch and tang that keeps everyone coming back for another spoonful.

I’ve served this at countless family picnics and potlucks, and it always disappears first from the table. There’s something about sharing a bowl of this salad that brings everyone together—it’s the kind of simple, wholesome food that makes memories.
