Buckwheat Pancake and Waffle Mix is one of my favorite recipes to keep on hand for busy mornings when the grandchildren come over. With just a few simple ingredients mixed together, you’ll have a homemade mix that’s ready whenever you need it.
What makes this mix so special is how it combines wholesome flour with the perfect balance of baking powder and baking soda to give you light, fluffy pancakes and waffles every time. The touch of sugar adds just a hint of sweetness, and when you make it from scratch at home, you know exactly what’s going into your family’s breakfast.
I love keeping a batch of this mix in my pantry so I can whip up a warm stack of pancakes or waffles for the grandkids on Sunday mornings. There’s something so comforting about serving homemade pancakes fresh off the griddle, and watching their little faces light up makes my heart so happy.
