Basic Chicken Salad

This basic chicken salad recipe is a family favorite. I like to use baked thighs or breasts that have been sprinkled with basil or rosemary. I usually make a double batch of this salad so we have leftovers for the week. It’s perfect for a quick lunch or light dinner..

Basic Chicken Salad Cooking Instructions

1. Place the almonds in a frying pan over medium-high heat. Shake the pan frequently to prevent them from burning. Keep a close eye on them, as they can easily catch fire if left unattended. After they’re toasted to your liking, remove them from the pan and enjoy.

2. In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, toasted almonds, and celery. This simple dish is perfect for a summer picnic or light lunch. The mayonnaise and lemon juice will give the chicken a tangy flavor, while the toasted almonds add a nice crunch. If you’re looking for a bit more of a kick, you can always add a bit more pepper to taste.

This salad is a tasty, convenient lunch option. Please keep in mind, that pre-made salads are often filled with sodium, which can be harmful to your health. This recipe is a healthy, delicious alternative to store-bought salads.
